Professional Macaron Class
This is a six-hour, one-on-one class for the professional pastry chef. In this class, I will teach you all the recipes for my macarons and butter cream filling that I use in the macarons I sell. You will learn both the French and Italian meringue method of making macarons. You will also learn about the commercial aspects of making macarons, such as where to get ingredients, proper storage, packaging, etc.
The class is taught in my professional kitchen in two three-hour sessions with a break for lunch in the middle.
