I teach French Pastry Enrichments at the International Academy in Oakland County. The enrichment consists of ten two-hour classes where I teach students how to cook a variety of French pastries. During the final class session, the students prepare pastries of their choice for their parents, who are invited to attend.
My goal in the enrichment is to introduce students to a range of French pastries, to teach them a variety of pastry cooking techniques, and to help them understand the science behind the recipes they are making.
