My Classes for Professionals are individual classes designed for professional chefs. In these classes, I teach you the recipes and techniques required to prepare the pastries in your commercial kitchen. In addition, I draw from my professional pastry chef training at the Institut National de la Boulangerie Patisserie in Rouen, Normandie France, my years of experience selling to the public, my work as the pastry chef in a four-star restaurant, and my success in building a French pastry business in Michigan to provide you with information for proper planning, storage, and presentation of your products.
Classes are one-on-one with the possibility to add one additional chef from the same establishment at a reduced rate. All equipment and ingredients are provided. Students are expected to be dressed appropriately for the class.
